Origins
Since ancient times, residents of Naples, Italy have prepared flatbread with simple toppings. Antica Pizzeria Port’Alba revolutionized this practice around 1830 when it introduced pizza featuring cheese and tomato sauce as the primary ingredients – quickly becoming a beloved staple in Napolitan cuisine and earning Protected Designation of Origin status from the European Union.
No matter if it’s enjoying an authentic Neapolitan ice cream cone or transporting yourself back to Naples with every bite of traditional pizza, Neapolitan food embodies a strong sense of community and artistic tradition that reflect their people and their passion for life.
Napolitano (sometimes also spelled Napolino, Napoletano or Napoletana), however, remains of unknown origins. Early records do not offer much proof for this theory, with Allegranza Napolione recorded at Lipara Messina on May 20th 1567 as being its bearer; some theories indicate Corsican origins or possibly being an anagram of Latin for new.

Napolita is renowned for its centuries-old culinary tradition and artful creativity, best exemplified in their famous Margherita pizza; an irresistibly thin crusted pie topped with fresh tomato sauce and creamy mozzarella that epitomises passion and artistry.

Techniques
Artisanal techniques play a central role in crafting Napolita pizza, transforming it from mere cuisine into an exquisite culinary masterpiece. Each step–from hand-kneading dough to the dance of flames in wood-fired ovens–embodies tradition and expertise passed down from generation to generation.
Napolita pizza’s philosophy centers on using high-quality ingredients with minimal toppings for optimal taste and quick baking times, so that each ingredient’s natural flavors can come together and create a delightful harmony of taste.
While preserving traditional elements, Napolita pizza-makers also embrace innovation and adaptation to make delicious pizza that remains true to tradition while at the same time being adaptable and innovative. Specialty styles like the calzone add delightful contrast that shows diversity within this tradition. Napolita is more than a style of pizza: it is celebrated globally as part of an entire lifestyle that begins in Naples but celebrates simple culinary rituals around the globe through Protected Designation of Origin designation.
